I'm Katia and me and my uncle Fulvio run the Tuscan cooking class in our family farmhouse. We are 4 km far from the fantastic town of San Gimignano and we teach you how to prepare a real Tuscany meal but most important we teach you how the food should taste. Your meal will be a celebration and a fantastic time to spent in a real Tuscany family. We'll make a lot of typical Tuscany antipasti, then we prepare primi piatti, and we make one type of pasta hand made, two different sauces for pasta, and then a second course with meat.

You'll learn new cooking techniques that can easily be repeated at home. I was fortunate enough to grow up among the best cooks, my grandmother and my mother. Let the food be our language. I will introduce you how the ingredients can be made at home. In the past times people didn't have many ingredients and used their skills to make the best possible meal. The most important thing in Macedonian cuisine is that the dishes are made from only a few ingredients and you must use your imagination to make the testiest dish from the available products. Vegetarians are welcomed. Please let me know in advance if you have any dietary restrictions.


Fresh pasta and dinner in my biogarden


You will be fascinated by anecdotes about how my grandmother made pasta and what cooking represented in the past and still represents. An immersion in the real Apulian life and in Italian sociology! I will let Elisa, my friend and super expert collaborator in Apulian pasta, communicate with gestures and by example; he speaks only Italian but will manage to communicate with his heart and experience as always. And, once at home, you will produce your own good food yourself, and you will be reminded of what she has shown you. Instead, I will communicate, if necessary also simultaneously, in English, Italian and French and you will probably laugh at my linguistic "flights" and my role as "slave in Elisa's kitchen" 🙂 The lunch that follows is collaborative, everyone helps and, dishes and pans in the hands. The wine, the foods that I serve together with the pasta that we prepare together and that are all local and largely the fruit of my organic garden, do the rest.

In this class you will make delicious memelitas with your own hands, from preparing the dough to making a delicious molcajete sauce to accompany them. I will teach you recipes that you can easily repeat at home. We will cook in a traditional smoke kitchen, with utensils that have been used for generations in my family, you will discover our traditions and I will give you advice that will help you better understand and taste the dishes of Oaxacan cuisine. When we prepare the mole, I will teach you how to select the best ingredients that have given Oaxacan mole worldwide fame and recognition. Please let me know in advance if you have dietary restrictions so I can adjust the menu so you can fully enjoy the experience.


My Gelato Lab


When I had my gelato shop I've always wanted to educate my customers to the culture of gelato, and I've always desired to show them how gelato is made. Now that I don't have the shop anymore I still want to go on in my mission. Togheter we will prepare granita, gelato and sorbetto from raw ingredients, I will tell you about the professional procedures and the ones used in the home kitchen. You will learn also how to prepare gelato at home. At the end you will degustate your creations and learn how to recognize a good quality gelato. At the beginning, I learned to cook helping my mother around the house as a child and later studied at Lalibela Vocational College. Now, I ran my own kitchen in Lalibela.
