On the Uncle Nearest distillery tour, you will learn all about the man himself, Nathan “Nearest” Green, AKA Uncle Nearest. Nathan Green was born into slavery in Tennessee. He was also widely regarded as the finest whiskey distiller in the area. He is widely believed to be the perfector of the “Lincoln County Process,” where whiskey is filtered through sugar maple charcoal before barreling. This filtration process is what separates Tennessee Whiskey from bourbon. Nearest Green taught a young Jack Daniel the art of whiskey making. Years later, after the Civil War when Nearest Green was a free man, Jack hired “Uncle” Nearest as his first master distiller, making him the first African American master distiller in the country. Years later, the Nearest Green Distillery was opened in his honor, and is one of the largest black-owned distilleries in the country.

You’ve most probably heard of sugar shacking, that mysterious springtime activity ? If you’ve ever wondered what a “cabane à sucre” or sugar shack really is and what really happens at this place, here it is: Sugar shacks are popular in Eastern Canada because of Mother Nature, basically. You see, sugar maple trees love cold winters and in order for the sap to flow in the spring, the trees need cold nights and warm sunny days, which is exactly what we have here in Québec. Fun fact: Canada produces about 80 per cent of the world’s pure maple syrup, and Québec alone makes up over 90 % of the country’s production. In 2016 alone, Québec produced approximately 71.4% of the global production (source: FPAQ). And we make the best maple syrup in the world!

Travel by private vehicle over scenic to Cambodia’s former capital, Oudong, about 39km from Phnom Penh. The ride passes rural villages, local pagodas, and scenic rice paddies before reaching the main hill of Oudong. On the way, visit a family that is producing palm sugar at their house.Then, climb the stairs to the top of Oudong Mountain and enjoy magnificent views over the plains below. Your guide will explain the history of the area and its buildings the religious culture of Cambodia. On the way back to Phnom Penh stop to visit the village of Kompong Luong, famous for its silverwork. After arrived to Phnom Penh, see Wat Phnom Duan Penh where is the latest capital city of Phnom Penh City. Then, move to Royal Palace where is the residence of Royal family and next to Silver Pagoda. At the last stop, go to see the largest Independence Monument of Cambodia and also the Statue of Father King Norodom Sihanouk. Cooking from 9.00- 12.00 or 15.00- 19.00. Our chef will pick you up hotels in old quarter or Hoan Kiem area,  you then will start walking to the local market, you will see all ingredients and local foods. Complete your shopping, we come back our home to prepare and cook by yourself under the instruction of the chef from the beginning to the end, learning how to marinate and to spice will be the most crucial lesson. Duong Lam town is an ancient village, we ride a bicycle around town and see some ancient houses, and take a picture of the traditional make fish sauce in the local family. Duong Lam is 35 km2 from Hanoi. Duong Lam is a commune of Son Tay town, Hanoi, Vietnam. Duong Lam becomes the first ancient village in Vietnam. Two of Vietnam’s kings, Phung Hung (761-802) and Ngo Quyen (896-944) were born in Duong Lam, giving the village its prestige. Both men led resistance wars against northern invasion and after winning national independence, were crowned kings. After their deaths, the local people built them.
